Ingredients:
- 1 large onion, thinly sliced
- 1 carrot, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- 8 cups chicken or vegetable broth
- 1/4 cup soy sauce
- 1 tablespoon mirin
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- Salt and pepper to taste
- Green onions, chopped, for garnish
- 1 cup sliced mushrooms
- 1 cup spinach leaves, chopped
Instructions:
Heat the vegetable oil and put the pressure cooker on saut mode
Cut the onions, carrots, and garlic into small pieces and add them
Cook the onions until they become clear
Add the soy sauce, mirin, rice vinegar, sugar, salt, and pepper
You can use chicken or vegetable broth
Mix well
Set the pressure cooker to high pressure for 5 minutes and make sure the lid is on tight
When the time for cooking is up, quickly let the pressure out
Slowly open the lid and add the spinach and mushroom slices
Give them a stir and let them cook for a few minutes on the residual heat
Serve the Japanese Clear Onion Soup hot with green onions that have been chopped on top
