Ingredients:
- 1 store-bought pizza dough
- 1 bunch broccoli rabe, trimmed and chopped
- 1 cup raw cashews, soaked overnight
- 1/4 cup nutritional yeast
- 2 cloves garlic, minced
- 2 tablespoons lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1/4 cup unsweetened almond milk
- 1 tablespoon olive oil
- 1/2 cup vegan mozzarella cheese, shredded
- 1/4 cup vegan parmesan cheese, grated
Instructions:
Turn on your oven and heat it up to 425F 220C
Soaked cashews, nutritional yeast, garlic that has been minced, lemon juice, salt, black pepper, red pepper flakes, and almond milk should all be put into a food processor
If you need to, scrape down the sides of the bowl to make sure all the ingredients are well mixed
Blend until smooth
This is the cashew ricotta you want
Set a pan on medium heat and add the olive oil
It will take about 5 to 7 minutes of cooking after adding the chopped broccoli rabe
On a baking sheet that has been lined with parchment paper, roll out the pizza dough
Cover the dough with the cashew ricotta and leave a small border around the edges
Sauted broccoli rabe, vegan mozzarella cheese, and vegan parmesan cheese should be put on top of the pizza
It should be baked in a hot oven for 15 to 20 minutes, or until the crust is golden brown and the cheese is melted and bubbly
Take it out of the oven and let it cool down a bit before cutting it
Enjoy while hot
