Ingredients:
- 1 lb boneless chicken thighs
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- 1/4 cup cornstarch
- 1/4 cup Korean chili paste gochujang
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1/2 teaspoon sesame oil
- 8 small flour tortillas
- 1 cup shredded lettuce
- 1 cup shredded red cabbage
- 1/2 cup diced cucumber
- 1/4 cup chopped fresh cilantro
- Sesame seeds for garnish
- Cooking oil spray
Instructions:
Preheat your oven to 425F 220C
Cut the chicken thighs into bite-sized pieces
In separate bowls, place the flour, beaten eggs, and panko breadcrumbs
Coat each chicken piece with flour, then dip into the beaten eggs, and finally, coat with panko breadcrumbs
Place them on a baking sheet lined with parchment paper
Spray the chicken pieces with cooking oil to help them crisp up in the oven
Bake the chicken in the preheated oven for 20-25 minutes or until they are golden brown and crispy
While the chicken is baking, prepare the sauce by mixing together the Korean chili paste gochujang, soy sauce, rice vinegar, brown sugar, minced garlic, grated ginger, and sesame oil in a bowl
Warm the tortillas in a dry skillet or microwave until they are pliable
Once the chicken is done, remove it from the oven and toss it in the prepared Korean sauce until well coated
To assemble the tacos, place a portion of the Korean chicken in each tortilla, top with shredded lettuce, red cabbage, diced cucumber, and chopped cilantro
Sprinkle sesame seeds on top
