Ingredients:
- 1 package sugar-free pistachio pudding mix
- 2 cups almond milk
- 1 cup non-fat Greek yogurt
- 1/2 cup chopped almonds
- 1/4 cup crushed pistachios
- 1 tablespoon honey optional
- 1 cup crushed sugar-free graham crackers
- Fresh berries for garnish
Instructions:
Add the sugar-free pistachio pudding mix to a bowl and whisk in the almond milk until everything is well mixed
Do nothing for 5 minutes so it can get thicker
Add the chopped almonds to the non-fat Greek yogurt in a different bowl
In parfait glasses or small jars, layer the pistachio pudding, the almond yogurt, and the crushed graham crackers in a certain order
Put more layers on top of each other until the glasses are full, ending with a layer of crushed pistachios
Add more sweetness by drizzling honey on top if you like
Put it in the fridge for at least an hour to let the flavors mix
Add fresh berries as a garnish before serving
