Crispy Salmon Succotash

Crispy Salmon Succotash is a tasty dish made with salmon fillets with a crunchy skin served over a colorful mix of corn, bell peppers, tomatoes, and lima beans. Garlic, fresh herbs, and a hint of lemon juice add flavor to the succotash, making it a colorful and tasty dish thats great for any event.

Ingredients:

  • 4 salmon fillets
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 2 cups corn kernels
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh or frozen lima beans
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh basil
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons butter
  • 1 lemon, juiced
  • 1/4 cup grated Parmesan cheese

Instructions:

Get the oven ready by heating it up to 400F 200C

Use salt and pepper to season the salmon fillets with

A big skillet that can go in the oven should have olive oil in it

Fry the salmon fillets for 3 to 4 minutes with the skin side down until they are crispy

Place the skillet in an oven that has already been heated and bake for another 5 to 7 minutes, or until the salmon is fully cooked

In the meantime, melt the butter over medium-low heat in a different pan

Add the garlic and cook for about one minute, until it smells good

Put lima beans, corn, bell peppers, and cherry tomatoes in the pan

After 5 to 6 minutes, the vegetables should be soft

Add cheese, basil, parsley, and lemon juice and mix well

Add pepper and salt to taste

Place the crunchy salmon fillets on top of the succotash
