Ingredients:
- 1 whole chicken, cut into 8 pieces
- 40 cloves of garlic, peeled
- 1/2 cup olive oil
- 1 tablespoon butter
- Salt and pepper to taste
- 2 sprigs of fresh rosemary
- 1 lemon, sliced
Instructions:
Preheat oven to 375F 190C
Season chicken pieces generously with salt and pepper
In a large oven-safe skillet, heat olive oil over medium-high heat
Add chicken pieces to the skillet and sear on both sides until golden brown, about 5 minutes per side
Remove chicken from the skillet and set aside
In the same skillet, add butter and garlic cloves
Saut garlic until lightly browned and fragrant, about 3-4 minutes
Return chicken pieces to the skillet, nestling them among the garlic cloves
Place rosemary sprigs and lemon slices on top of the chicken
Cover the skillet with foil and transfer it to the preheated oven
Bake for 30-35 minutes or until the chicken is cooked through and juices run clear
Serve hot, spooning garlic and pan juices over the chicken
